BIERCOL – CALLUNA – Calluna vulgaris
Visual appearance: Light amber to dark amber, light brown to dark brown, often with reddish tones.
Extraordinarily shiny surface with slight undulations due to its high viscosity.
Smell: Intense and very persistent of leaf litter fallen to the ground in autumn.
Taste: Sweet with clear bitter and salty notes. Feeling of freshness when you try it.
Texture: Creamy and unctuous sensation.  Crystals appear in the middle of the honey, giving a crunchy sensation.

ROSEMARY – Salvia Rosmarinus
Visual appearance (color): very clear
Smell: not very intense, medium persistence, floral.
Sweet taste. Sometimes with slight acid notes.
Texture: Fine crystallization.

THYME – Thymus sp.
Visual appearance: Light amber to reddish amber
Smell: Floral with a clear phenolic component like clove, medicinal, smoky, very intense and very persistent.
Flavor: Sweet with a clear herbal component.
Texture: Little tendency to crystallization.
