Monofloral honey is a unique natural product, obtained from bees that collect nectar primarily from a single species of flower.They offer unique flavors, aromas and colors, reflecting their unique origin.

These honeys, such as Orange Blossom, Lavender, Rosemary, Thyme, Cantueso, Birch... are the result of the meticulous work of beekeepers and bees, in perfect harmony with the flowering cycles.

Raw honey

ROMERO-Salvia rosmarinus

Sensory characteristics

Visual appearance (color): very clear

Aroma: not very intense smell, medium persistence, floral.

Taste (mouth sensations): sweet, generally without more. Sometimes with slight sour notes.

Touch: fine crystallization when it is rich in almond. Thick crystallization when it is rich in radish.

BIERCOL-CALLUNA-Calluna vulgaris

Sensory characteristics

Visual appearance (color): light amber to dark amber, light brown to dark brown, often with reddish tones.

Extraordinarily shiny surface with slight undulations due to its high viscosity.

Aroma: intense and very persistent leaf litter fallen to the ground in autumn.

Taste (mouth sensations): sweet with clear bitter and salty notes. Freshness feeling on the taste.

Touch: crystallization with separation of textures: crystals appear in the middle of the honey, giving a crunchy sensation.

TOMILLO-Thymus sp.

Sensory characteristics

Visual appearance (color): light amber to amber. It may have a slight reddish hue.

Aroma: floral with a clear phenolic component such as clove, medicinal, smoky, very intense and very persistent.

Taste (mouth sensations): sweet with a clear sour component.

Touch: little tendency to crystallization.

CREMA DE LAVANDA-Espliego Lavandula latifolia, L. vera

Sensory characteristics

Visual appearance (colour): white to amber. It sometimes can be darker.

Aroma: floral with a clear lavender component, extraordinarily intense and very persistent.

Taste (mouth sensations): sweet with sour notes. If it is dark, with the presence of honeydew, it may have slight salty notes. The aromas increase noticeably in the retronasal area and extend through the aftertaste and persist over time, leaving a pleasant flavor.
Touch: average crystallization.

LAVANDA-Espliego Lavandula latifolia, L. vera

Sensory characteristics

Visual appearance (colour): white to amber. It sometimes can be darker.

Aroma: floral with a clear lavender component, extraordinarily intense and very persistent.

Taste (mouth sensations): sweet with sour notes. If it is dark, with the presence of honeydew, it may have slight salty notes. The aromas increase noticeably in the retronasal area and extend through the aftertaste and persist over time, leaving a pleasant flavor.
Touch: average crystallization.

CANTUESO-Lavandula stoechas

Sensory characteristics

Visual appearance (color): white - extra light amber.

Aroma: faint floral, not very intense, not very persistent, sometimes with very light camphor notes that increase in the retronasal.

Taste (mouth sensations): sweet, in some cases with slight sour notes. It differs from honeysucker honey, basically, in that this one does not have a “greasy” palate sensation.

Touch: slow crystallization, frequently starting at the bottom and rising in the form of a constellation (cloud of opaque microcrystals).

AZAHAR-Citrus sp.

Sensory characteristics

Visual appearance (color): clear.

Aroma: floral, with a clear, intense and persistent smell of sweet flowers.

Taste (mouth sensations): sweet, with a clear citrus component, very marked.

Touch: slow crystallization and fine crystal.
